I present to you- a simple pasta that can be made in 30 minutes! Broccoli is one of my favorite vegetables. and for the most part, its available year-round. Although the school-year craziness hasn't started yet, i'm still trying out some easy recipes that i can whip up on a busy school night. This one is super simple but definitely a keeper:)
Ways to make this recipe even simpler? You can buy frozen broccoli or spinach if you're really in a pinch. Yup, that's probably what midterm week is going to look like.

anyways, i know it's not much, but i just wanted to share a cute little recipe with you guys. oh, and word to the wise, if you're a single college student like me, and don't plan on sharing with others because your friends don't like broccoli, do not make an entire pound of pasta. I've been eating this stuff for about 4 days now... :)
Spinach and Broccoli Pasta
2 tablespoons of olive oil
2 cloves of garlic, minced
3 heads of broccoli, chopped
1/2 teaspoon red pepper flakes
15 ounces of fresh spinach
Salt and pepper to taste
1 pound of your favorite pasta
1/2 cup grated parmesan cheese
Bring a large pot of water with salt in it to a boil. Cook pasta until al dente. While the pasta is cooking, heat the olive oil and garlic in a large nonstick pan for one to two minutes. Add in the broccoli with 1/2 a cup of water, some salt, and the red pepper flakes, and cover until broccoli is steamed. When the broccoli is fully cooked, mix in the spinach and cook for two to three more minutes. Toss with the pasta and serve with grated parmesan cheese on top.
