I present to you... my c3 salad! I was going to throw in some carrots too, but i ran out:( sad days.
anyhow, i got the cous cous from my favorite place in the whole world, Trader Joes. it looks like this:
This pretty little cous cous mix is the healthiest/cheapest meal you can get at trader joes, and it's great as a side salad or a dinner all by itself. this time, i decided to make a summery salad with cucumbers and corn. mmm.
Since I'm a lazy college student who subsists on grilled cheese half of the time, and leftover baked goods about a quarter of the time, the other quarter of my food basically needs to be extremely healthy to compensate. And since i never know when I will feel like being healthy (because let's be real, healthy food moments are a rarity for anyone), i try to stock up on frozen vegetables when i can:)
corn is just one of those vegetables that's easier to buy frozen, rather than on the cob. Sure, corn on the cob is great for barbecues, picnics, and the like, but when it comes to convenience, i say go frozen!
Cucumber-Corn Cous Cous Salad:
1 package of harvest grain mix from Trader Joes
3/4 of a large onion, chopped finely
12 ounces of frozen corn, thawed out completely
2 large cucumbers, peeled and chopped
2 tablespoons lemon juice
3 tablespoons olive oil
2 tablespoons white balsamic vinegar
Prepare cous cous according to the package, and set aside to cool. When the cous cous is no longer warm, mix in the chopped onion, cucumbers, and corn. In a smaller bowl, mix together the lemon juice, olive oil, and white balsamic vinegar and pour over the salad before serving. Serve cool or cold.
