Pumpkin Pancakes with Apple Topping

It's gotten to that crazy point in the semester when the nights are getting longer, everyone is up to their eyes in work, and we all just want Thanksgiving to come around so we can eat our weight in pumpkin pie.   

Over the weekend, I developed a major craving for pumpkin pie, and i knew i couldn't wait it out until Thanksgiving.  So, i decided that pumpkin pancakes would be a pretty sweet way to satisfy my pumpkin craving while being somewhat healthy before the jeans-tightening holiday season. 


naturally, with many apples left over from Apple Bake, apple topping seemed like the right addition to these pancakes :)  

mmm thank goodness for Saturday morning pancakes.  so yummy!

Pumpkin Pancakes (adapted from this recipe)
Instead of adding 1 mashed banana, add 1/4 of a cup of pumpkin and 1 extra tablespoon of sugar. 

Apple Topping
2 to 3 large apples, of any variety
1 tablespoon butter
1 tablespoon cinnamon
1/2 tablespoon nutmeg

Peel and cut the apples into bit-sized pieces.  Melt the butter in a pan under medium heat, and add in the apple pieces. Sprinkle the cinnamon and nutmeg over the apples, and let the apples cook down until they are soft.  Serve warm on top of waffles or pancakes.
